Apple Enchiladas


A little improvisation of an evening when I tried to dispose of the tortillas lying around in my cupboard.
Apples rolled in flour tortillas. VERY delicious, easy and fast to make. Substitute apples with peaches or cherries if desired.

Make dessert enchiladas by filling flour tortillas with a mixture of canned apple pie filling and cinnamon and topping with a brown sugar syrup. This recipe is a great choice for breakfast or brunch.

*Ingredients / for 3 people :

°3 tortillas (here, they were wheat pancakes)
°2 beautiful apples
°1 handful of raisins
°1 tablespoon of lemon juice
°3 tbsp powdered sugar
°1 tablespoon of cornstarch
°1 pinch of cinnamon
°Flaked almonds
For the sauce:
°12.5 cl of apple juice
°10g caster sugar
°10 g brown sugar
°10g butter
