Last year, I started a tradition of making a half cake for my daughter’s half birthday. I made a Pumpkin Chocolate Marble Bundt Cake, and it was a hit. This year, we celebrated her half birthday in September with this Apple Cinnamon Bundt Cake. She loved it, and we enjoyed half of the cake while the other half went to my husband’s workplace. It’s a fun tradition and the perfect fall treat, especially if you’ve been apple picking. It’s a great addition to a Thanksgiving table, offering a delicious alternative to pies.
Apple Cinnamon Bundt Cake
Ingredients:
2 large eggs
1/2 cup vegetable oil
1/2 cup unsweetened applesauce
3/4 cup granulated white sugar
1/2 cup brown sugar
1/2 teaspoon nutmeg
2 cups all-purpose flour
2 teaspoons cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla extract
4 cups diced apples (Gala or Golden Delicious work well)
Instructions:
Preheat your oven to 350°F. Spray a 10-inch bundt pan with non-stick spray and set aside.
In a large bowl, use an electric mixer to beat the eggs and vegetable oil on medium speed until foamy.
Add in the applesauce, granulated sugar, brown sugar, nutmeg, flour, cinnamon, baking soda, salt, and vanilla. Mix well.
Stir in the diced apples with a spoon until evenly distributed.
Pour the batter into the prepared bundt pan.
Bake for 30-40 minutes or until golden brown and a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 10-15 minutes before flipping it onto a platter to cool completely.
