Mississippi Mud Potatoes
Ingredients:
4 large russet potatoes, diced
6 slices of beef bacon, cooked and crumbled
1 ½ cups shredded cheddar cheese
1 cup sour cream
½ cup melted butter
¼ cup chopped green onions
2 cloves garlic, minced
1 teaspoon paprika
Salt and pepper to taste
Directions:
Preheat your oven to 375°F (190°C).
In a large mixing bowl, toss the diced potatoes with melted butter, garlic, paprika, salt, and pepper.
Spread the potatoes evenly on a greased baking sheet and bake for 45-50 minutes, or until they are golden brown and crispy. Stir halfway through to ensure even cooking.
Remove the potatoes from the oven and transfer them to a large casserole dish.
Add sour cream, crumbled beef bacon, and half of the shredded cheese to the potatoes. Mix everything together.
Sprinkle the remaining cheese and chopped green onions on top.
