Soft and Chewy Pumpkin Oatmeal Cookies 🎃🍪
Ingredients:
1 cup unsalted butter, softened
1 cup brown sugar, packed
½ cup granulated sugar
¾ cup pumpkin puree
1 large egg
1 tsp vanilla extract
1 ½ cups all-purpose flour
1 ½ cups old-fashioned oats
1 tsp baking soda
1 ½ tsp ground cinnamon
½ tsp ground nutmeg
¼ tsp ground cloves
¼ tsp salt
Instructions:
Preheat Oven:
Preheat oven to 350°F (180°C). Line baking sheets with parchment paper.
Make the Dough:
In a large bowl, beat butter, brown sugar, and granulated sugar until creamy. Add pumpkin puree, egg, and vanilla extract. Mix well.
In a separate bowl, whisk together flour, oats, baking soda, cinnamon, nutmeg, cloves, and salt. Gradually add to wet ingredients, mixing until combined.
Form Cookies:
Scoop dough onto prepared baking sheets, spacing them 2 inches apart.
Bake:
Bake for 10-12 minutes or until edges are lightly golden.
Cool and Serve:
Allow cookies to cool on baking sheets before serving.
