Ingredients:
– 2 cans Mexicorn
– 1 can Rotel (Mild or Hot)
– 2 cups shredded cheddar cheese
– 4-6 green onions, sliced
– 1 cup mayonnaise (any variety)

– 1/2 bunch cilantro, finely chopped (add more if desired)
– 1 can black-eyed peas (optional, adds extra texture and flavor)
